1 1/3 cups sliced carrots
1 cup diced onion (or 1/2 cup dried chopped onion)
4 garlic cloves, minced (I use 1 tbls jar garlic)
3 cans low-sodium, fat-free beef broth
3 cups chopped cabbage (1/4 head)
1 cup green beans
1 14-oz can diced tomatoes, including the juice
1 tsp dried basil (or what looks good to you)
1/2 tsp dried oregano (or what looks good to you)
1 cup diced zucchini
1. In large saucepan sprayed with nonstick cooking spray, saute the carrot, onion and garlic over low heat until softened, about 5 minutes.
2. Add broth, cabbage, beans, tomatoes, seasonings and bring to boil. Lower heat and simmer covered about 15 minutes or until beans are tender.
3. Stir in zucchini and heat 3-4 minutes. Serve hot.
Makes 8 one cup servings - 0 points per serving.
